Original Marshallese food consists of breadfruit, coconut, pandanus and fish. A modern Marshallese diet consists of white rice and fried, barbecued or grilled chicken (which is why they have the highest diabetes rate in the world).
As a pescetarian, my diet before coming to the Marshalls consisted mainly of fruit, vegetables, fish and milk products. Complex carbs in the mornings - anything else was a treat.
In Majuro, with the exception of apples and bananas, affordable fresh fruit are very hard to come by. Vegetables are usually in pretty bad shape by the time they arrive in our supermarkets and ludicrously expensive (4$/pound for moldy broccoli anyone?). Joghurts are rare- and usually waaaay past their expiry date. As for complex carbs... oh well...
After over two months of no exercise, a type of inverse Atkins diet (carbs carbs carbs) and increasing amounts of gloom at the hard work that lies ahead to get myself into some sort of shape again, I came across this inspirational message (thanks to Brigitte).
